Pesto penne
More vegetarian for dinner tonight. Start by putting on some pasta.
Meanwhile, add fresh basil and oregano leaves, pine nuts, minced garlic and s&p to a mortar and pestle. Mash to a rough pulp. Mix in good quality olive oil and a light snowfall of parmeasan.
Toss with caramalized onion and penne and voila - a delicious dinner in 15 minutes!



That looks absolutely fantastic. I think the way you presented this one -- leading off with the basil and pine-nuts in the mortar was genius.
